It reminds me of 'Being for the Benefit of Mr Kite' - fun!

I agree that your sign-off line is a better visual image of a restaurant kitchen, Mr Konisberg...but it's strictly against the rules of 'found objects', 'found poetry' etc, to alter any detail... Interestingly, it comes from a restaurant review of a locally celebrated eatery with a 'no more than four to a table' rule, in its crammed room; about which Robert Hershon has written a poem, 'Never Five'; which I'm told is now printed on the menu..What amused me was that the style of this review is not dissimilar to Hershon's own deadpan style...
